- 8 rice paper wrappers
- 1 lb shrimp, cooked and peeled
- 1 avocado, sliced
- 1 cup lettuce, shredded
- 1/2 cup carrots, julienned
- 1/2 cup cucumber, julienned
- Fresh herbs (mint, cilantro, or basil)
- Dipping sauce (peanut or hoisin sauce)
Instructions
- Prepare all ingredients by cooking shrimp and slicing avocado, lettuce, carrots, and cucumber.
- Soak one rice paper wrapper in warm water for about 10-15 seconds until soft.
- Lay the softened wrapper on a clean surface.
- Place a few shrimp, avocado slices, lettuce, carrots, cucumber, and herbs in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
- Repeat with remaining wrappers and filling.
- Serve with your choice of dipping sauce.
Notes
- Make sure to keep the rice paper wrappers covered with a damp cloth to prevent them from drying out.
- Feel free to customize the filling with other vegetables or proteins.
- These rolls are best served fresh but can be stored in the refrigerator for a few hours.
