Ingredients
  

For the Omelette
  • 1 block Extra-Firm Tofu Ensure it's drained and pressed for the fluffiest texture
  • 1/4 cup Soy Milk Feel free to substitute with any plant-based milk
  • 1 tablespoon Rapeseed Oil Any neutral oil will work
  • 1/4 cup Rice Flour Consider chickpea flour as a substitute
  • 2 tablespoons Potato Starch Integral for binding; no substitutes recommended
  • 1/4 teaspoon Turmeric Optional; skip for a milder taste
  • 1/2 teaspoon Fine Sea Salt Tweak according to your taste preferences
  • 1/4 teaspoon Kala Namak Optional; recommended for authentic eggy flavor
  • 1/4 cup Vegan Cheese Can be omitted or swapped with nutritional yeast
  • 1 cup Fresh Spinach Easily replace with other leafy greens or sautéed veggies
For Serving
  • 1 cup Crispy Hash Browns
  • 1 cup Fresh Fruit
  • 2 slices Whole Grain Toast with Avocado
  • 1/2 cup Dairy-Free Yogurt and Granola

Method
 

Preparation Steps
  1. Blend the drained and pressed extra-firm tofu, soy milk, rapeseed oil, rice flour, potato starch, turmeric, and fine sea salt in a blender for about 30 seconds until smooth yet grainy.
  2. Heat a medium frying pan over medium heat and add a tablespoon of vegan butter or neutral oil to coat the bottom evenly.
  3. Pour half of the blended tofu mixture into the hot pan, spreading it evenly to about ½ inch thick. Cover and cook for 3 to 4 minutes until bubbles form and edges set.
  4. Remove the lid, sprinkle kala namak on one half, and add half the vegan cheese and fresh spinach, or other fillings. Cover and let cook for additional minute.
  5. Fold the omelette over, cover, and cook for another minute until nicely browned and fluffy. Slide onto a plate and repeat with remaining mixture.

Notes
