Cooking Instructions
- Bring a large pot of salted water to a boil over high heat. Cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add ground beef, cooking undisturbed for 5-7 minutes until browned. Drain excess fat.
- Add minced garlic to the skillet, sauté for about 1 minute until fragrant.
- Stir in diced tomatoes and beef broth, bringing to a gentle simmer for about 5 minutes.
- Reduce heat, and stir in Greek yogurt and Parmesan cheese until creamy.
- Add drained pasta to the skillet, tossing to coat in the sauce. Use reserved pasta water if needed to adjust consistency.
- Serve hot, optionally garnished with extra Parmesan or fresh herbs.
