Cooking Steps
- Heat 1 tablespoon of avocado oil in a 10-inch sauté pan over medium-high heat until shimmering, about 2 minutes.
- In a bowl, combine the shrimp with chipotle powder, garlic powder, onion powder, and smoked paprika. Stir to coat evenly.
- Add the seasoned shrimp to the pan and sauté for 4 to 6 minutes, stirring frequently, until the shrimp are opaque and curl up.
- Drain any excess liquid from the pan, lower heat to medium-low, and warm the soft corn shells for about 1 minute on each side.
- Fill each warm corn shell with shredded cabbage, cooked shrimp, sliced avocado, and a scoop of peach salsa.
- Serve the tacos on a platter with lime wedges and optional hot sauce on the side.
