- In a medium bowl, whisk together ½ cup of sour cream (or Greek yogurt), 2 tablespoons of freshly squeezed lime juice, and 2 tablespoons of olive oil. Add in 1 teaspoon of ground cumin, 1 teaspoon of chili powder, and a pinch of salt and pepper to taste. Continue whisking until the mixture is smooth and well combined, creating a zesty dressing.
- In a large mixing bowl, add 2 cups of cooked chicken breast, 1 cup of rinsed black beans, and 1 cup of corn kernels. Next, incorporate 1 diced red bell pepper, ½ a diced red onion, 1 cup of halved cherry tomatoes, and 1 diced avocado. Don’t forget to sprinkle in ¼ cup of chopped fresh cilantro.
- Pour the zesty dressing over the assembled salad ingredients in the large bowl. Using two large spoons, gently toss everything together until all the ingredients are well coated in the dressing.
- Once the salad is thoroughly mixed, sprinkle ½ cup of shredded cheddar or Mexican blend cheese over the top for added richness. Serve immediately or allow it to chill in the refrigerator for at least 30 minutes.
