Ingredients

For the Cookies
  • 1/2 cup Butter Can be swapped with coconut oil for a dairy-free option.
  • 1 cup Sugar Granulated sugar; brown sugar can be used for a caramel flavor.
  • 1/2 cup Milk Any milk, including almond milk for a nut-free version.
  • 1/4 cup Fresh Lemon Juice Use fresh juice for the best flavor.
  • 3 cups Rolled Oats Quick oats can be used for different texture.
  • 1 tablespoon Lemon Zest Enhances lemon flavor.
  • 1 teaspoon Vanilla Extract Add more for extra sweetness.
  • 1 pinch Salt Balances sweetness.

Equipment

  • Medium saucepan

Method

Step-by-Step Instructions
  1. In a medium saucepan, melt the butter over medium heat, stirring gently until it bubbles, about 2-3 minutes.
  2. Add sugar, milk, and lemon juice to the melted butter, stirring well. Bring the mixture to a rolling boil and boil for 1 minute while stirring, then remove from heat.
  3. Mix in rolled oats, lemon zest, vanilla extract, and salt. Stir until well combined and oats are coated, about 1-2 minutes.
  4. Drop spoonfuls of the mixture onto a wax or parchment-lined baking sheet, leaving space between cookies. Aim for about 12-15 cookies.
  5. Allow the cookies to sit at room temperature for at least 30 minutes to harden.
