- Proof the Yeast: Combine warm water, active dry yeast, and 1 tablespoon of granulated sugar in a small bowl. Stir and let sit for 5 minutes until foamy.
- Combine the Ingredients: In a mixing bowl, add softened butter, eggs, remaining sugar, warm milk, mashed ube, ube flavoring, and salt. Mix until smooth.
- Form the Dough: Gradually add flour, stirring until a shaggy dough forms. Adjust flour as needed until the dough is soft but not sticky.
- Knead the Dough: Transfer dough to an oiled surface. Knead for about 10 minutes until smooth and elastic.
- First Rise: Place in a greased bowl, cover with a towel, and let rise in a warm area for 1.5-2 hours until doubled in size.
- Shape the Rolls: Gently deflate the dough, cut into 14 pieces, flatten, add cheese, and seal edges.
- Coat & Second Rise: Roll each filled roll in breadcrumbs, place on a baking sheet, cover and let rise for 30-60 minutes.
- Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-23 minutes until golden brown. Let cool slightly before serving.
