Ingredients
  

  • 2 tablespoons olive oil
  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup fresh spinach chopped
  • 1/2 cup sun-dried tomatoes chopped (not in oil)
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes optional
  • Fresh basil for garnish optional

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning on both sides.
  2. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the heavy cream, stirring to combine with the drippings. Bring to a simmer, then add the chopped spinach, sun-dried tomatoes, Parmesan cheese, and red pepper flakes if using. Stir until the spinach wilts and the cheese melts, about 2-3 minutes.
  4. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
  5. Serve hot, garnished with fresh basil if desired.
