Ingredients
  

For the Stuffing
  • 2 cups Cooked ground turkey
  • 1 cup Dried cranberries
  • 2 cups Cooked quinoa
  • 1 tsp Cinnamon For added warmth
  • 1 tsp Salt
  • 1 tbsp Olive oil For sautéing
For the Squash
  • 2 medium Acorn squashes Halved and seeded

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine cooked ground turkey, dried cranberries, cooked quinoa, cinnamon, salt, and olive oil. Mix until well combined.
  3. Scoop the stuffing mixture into each half of the acorn squash, packing it tightly.
  4. Place the stuffed squash halves on the prepared baking sheet and bake for 30-35 minutes, or until the squash is tender.
  5. Remove from the oven and let cool for about 5 minutes before serving.
