  • 4 large eggs

Method
 

  1. Preheat your oven to 425°F. Spread the frozen tater tots on a baking sheet in a single layer and bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  2. While the tater tots are baking, cook the breakfast sausage in a large skillet over medium heat until browned and fully cooked, breaking it apart with a spoon as it cooks.
  3. Once the sausage is cooked, sprinkle the flour over it and stir to combine. Cook for an additional minute to remove the raw flour taste.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the gravy thickens, about 5-7 minutes. Season with salt, black pepper, garlic powder, and onion powder.
  5. In a separate pan, cook the eggs to your preference (scrambled, fried, or poached).
  6. To assemble, place a generous portion of tater tots in a bowl, top with sausage gravy, add the cooked eggs, and sprinkle with shredded cheddar cheese. Garnish with sliced green onions.
