- Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- Combine all-purpose flour, powdered sugar, and salt in a mixing bowl, then mix in melted unsalted butter until crumbly. Press this mixture into the pan and bake for 16–18 minutes until golden.
- In a saucepan, cook raspberries, sugar, and cornstarch on low heat for 3–4 minutes until thickened, then set aside.
- Whisk together granulated sugar, flour, eggs, fresh lemon juice, lemon zest, and vanilla extract until smooth.
- Pour the lemon filling over the cooled crust and drop spoonfuls of the raspberry swirl on top, swirling gently with a toothpick.
