Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. Combine all-purpose flour, powdered sugar, and salt in a mixing bowl, then mix in melted unsalted butter until crumbly. Press this mixture into the pan and bake for 16–18 minutes until golden.
  3. In a saucepan, cook raspberries, sugar, and cornstarch on low heat for 3–4 minutes until thickened, then set aside.
  4. Whisk together granulated sugar, flour, eggs, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  5. Pour the lemon filling over the cooled crust and drop spoonfuls of the raspberry swirl on top, swirling gently with a toothpick.
  6. Bake for 22–26 minutes until the center is set. Allow to cool at room temperature, then chill in the fridge for at least 2 hours.
