Step-by-Step Instructions
  1. Begin by placing the boneless, skinless chicken breasts in the bottom of your slow cooker in a single layer.
  2. In a separate bowl, combine the pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper. Whisk until uniform.
  3. Pour the mixed sauce over the chicken breasts, ensuring each piece is coated.
  4. Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, carefully remove the chicken breasts and set them aside.
  6. Whisk together cornstarch and water to create a slurry and stir it into the sauce. Cook for an additional 5-10 minutes until thickened.
  7. Return the chicken to the slow cooker and let it soak in the sauce for 10-15 minutes.
