  • 2 cups fresh sweet corn about 4 ears, cooked and kernels removed
  • 1 cup cherry tomatoes halved
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice about 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin optional

Method
 

  1. In a large mixing bowl, combine the sweet corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, black pepper, and cumin (if using) until well combined.
  3. Pour the dressing over the corn mixture and toss gently to coat all the ingredients evenly.
  4. Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  5. Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, chill in the refrigerator for 30 minutes before serving.
