Step‑by‑Step Instructions
  1. Prepare the Eggs: Carefully separate the egg yolks from the whites and place in separate bowls.
  2. Whip the Egg Whites: Beat the egg whites on high speed until stiff peaks form, about 3-5 minutes.
  3. Cream the Egg Yolks: Mix yolks with monkfruit sweetener and vanilla extract until light and fluffy, about 4-5 minutes.
  4. Combine Ingredients: Add Greek yogurt to yolk mixture and blend until smooth. Sift in cornstarch and mix well.
  5. Fold in Egg Whites: Gently fold whipped egg whites into yogurt mixture to maintain airiness.
  6. Prepare the Baking Dish: Preheat oven to 330°F (160°C) and line a 7x11-inch baking dish with parchment paper.
  7. Bake the Cake: Pour batter into the baking dish and place in a larger tray. Add boiling water to the outer tray and bake for 45 minutes then increase temperature to 350°F (180°C) for an additional 15 minutes.
  8. Cool the Cake: Allow the cake to cool in the oven with the door slightly open for 1-2 hours.
