Ingredients
  

  • 2 6-ounce salmon fillets
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 cups mixed salad greens such as spinach, arugula, and romaine
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet and season with salt and pepper.
  3. In a small saucepan over medium heat, combine the balsamic vinegar, honey, and Dijon mustard. Bring to a simmer and cook for about 5 minutes, until slightly thickened. Remove from heat and stir in the olive oil.
  4. Brush the balsamic glaze over the salmon fillets.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
  6. While the salmon is baking, prepare the salad by combining the mixed greens, sliced strawberries, feta cheese, and sliced almonds in a large bowl. Drizzle with any remaining balsamic glaze and toss gently to combine.
  7. Once the salmon is done, remove it from the oven and let it cool for a few minutes. Serve the salmon on top of the salad.

Notes
