  • 1 cup Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • 1 large Banana ripe and mashed
  • 1/3 cup Honey or Maple Syrup adjust based on taste preference
  • 2 large Eggs
  • 1 cup Milk or plant-based alternative
  • 1 teaspoon Vanilla Extract
  • optional Googly Eyes Candies for decoration
  • optional 1/2 cup Chocolate Chips for added sweetness
  • optional 1/2 teaspoon Green Food Coloring for intense color

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. Blend spinach with 1/4 cup of milk until smooth and green.
  3. Whisk together whole wheat flour, baking powder, and optional food coloring in a bowl.
  4. Mash banana and mix with honey, eggs, vanilla, and the spinach blend until well combined.
  5. Fold wet ingredients into dry ingredients gently until just combined.
  6. If desired, fold in chocolate chips.
  7. Fill each muffin cavity about 3/4 full with the batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool in the tin for a few minutes, then add googly eyes to decorate.
