Step-by-Step Instructions
  1. In a large mixing bowl, combine the peri peri sauce, olive oil, minced garlic, fresh lemon juice, and season generously with salt and pepper. Add the chicken thighs and coat well. Cover and let marinate in the fridge for at least 2 hours or overnight.
  2. Preheat your grill to medium-high heat, around 375°F to 450°F (190°C to 232°C), about 15-20 minutes before grilling. Lightly spray the grill grates with cooking oil.
  3. Place the marinated chicken thighs skin-side down on the grill. Cook for 15-20 minutes without moving, then flip and cook until golden-brown and the internal temperature is 165°F (74°C).
  4. After grilling, let the chicken rest for about 5 minutes to allow juices to redistribute.
  5. Serve the chicken hot off the grill with grilled vegetables or a fresh salad.
