Step-by-Step Instructions
  1. Start by washing 2 lbs of Yukon gold or baby potatoes and pat them dry with a clean towel. Cut them into 1-inch cubes.
  2. In a medium bowl, combine onion powder, garlic powder, salt, black pepper powder, and paprika. Drizzle in olive oil and stir until you have a smooth paste.
  3. Add the cubed potatoes into the bowl with the spice mix. Toss everything gently until the potatoes are evenly coated.
  4. Preheat your air fryer to 400°F. Spray the air fryer basket with a light coat of oil. Place the coated potatoes in a single layer, and air fry for 18 minutes, shaking halfway through.
  5. For oven method, preheat to 425°F, spread seasoned potatoes on a baking sheet, and bake for 25 to 30 minutes until golden brown and crispy.
  6. In a small saucepan, sauté minced garlic in olive oil until golden and fragrant. Stir in cayenne, cilantro, paprika, and lemon juice.
  7. Once the potatoes are crispy and golden, toss them with the cilantro sauce until well-coated.
