Ingredients
  

For the Beef Marinade
  • 1 pound Ribeye or Sirloin Steak Substitute with chicken thighs for a lighter option.
  • 1/4 cup Soy Sauce Use low-sodium if watching sodium intake.
  • 2 tablespoons Gochujang (Korean Chili Paste) Sriracha can be used as a substitute.
  • 1 tablespoon Sesame Oil Avocado oil can substitute for a more neutral taste.
  • 1 tablespoon Brown Sugar Can substitute with honey or maple syrup.
  • 2 cloves Garlic Cloves Garlic powder can be used in a pinch.
  • 1/2 teaspoon Black Pepper White pepper can be used for a milder flavor.
For the Ramen Broth
  • 4 cups Chicken or Beef Broth Vegetable broth offers a tasty alternative.
  • 1 tablespoon Gochugaru (Korean Red Chili Flakes) Adjust according to spice preference.
  • 1 tablespoon Rice Vinegar Apple cider vinegar can be used as a substitute.
For the Creamy Sauce
  • 1/2 cup Mayonnaise (preferably Kewpie) Regular mayonnaise is okay but Kewpie offers more depth.
  • 1-2 tablespoons Sriracha or Korean Hot Sauce Adjust according to spice level.
  • 1 teaspoon Garlic Powder Fresh garlic can also be used.
For Assembly
  • 2 packs Instant Ramen Noodles Feel free to experiment with other noodle types.
  • 2 stalks Green Onions Chopped cilantro or spring onions can be used.
  • 2 tablespoons Toasted Black Sesame Seeds Can be replaced with crushed peanuts or sunflower seeds.

Method
 

Instructions
  1. In a bowl, whisk together soy sauce, gochujang, sesame oil, brown sugar, minced garlic, and black pepper. Coat the ribeye or sirloin steak in the marinade, cover, and refrigerate for at least 30 minutes.
  2. Preheat the grill or stovetop pan to medium-high heat. Once hot, add the marinated steak and cook for 3-4 minutes on each side for medium-rare. Transfer to a cutting board and let it rest for 5 minutes, then slice it thinly against the grain.
  3. Bring a pot of water to a boil and add the instant ramen noodles. Cook for 2-3 minutes until just tender, then drain and rinse briefly under cold water. Set aside.
  4. In a large pot, heat your choice of broth over medium heat until simmering. Stir in gochugaru, soy sauce, rice vinegar, sesame oil, and a pinch of salt. Simmer for about 2 minutes.
  5. In a small bowl, mix together mayonnaise, sriracha, sesame oil, garlic powder, and brown sugar until smooth. Adjust sriracha for desired spice level.
  6. To serve, divide the cooked noodles between bowls, ladle hot broth over the noodles, arrange sliced beef on top, drizzle with the creamy sauce, and garnish with green onions and toasted sesame seeds.

Notes

For best results, marinate steak for 1-2 hours. Ensure proper cooking temperature for a nice char on the steak. Avoid overcooking the noodles as they will continue to cook in the broth.
