  1. Begin by slicing fresh king oyster mushrooms into ¼-inch thick pieces. Halve extra-large mushrooms to soak up the marinade.
  2. In a medium bowl, whisk together soy sauce, gochujang, mirin, sugar, minced garlic, and sesame oil until smooth.
  3. Toss sliced mushrooms in the marinade and let sit for at least 20 minutes or refrigerate overnight for maximum flavor.
  4. Heat a cast-iron pan over medium heat, add a splash of oil, and cook marinated mushrooms for 2-3 minutes per side.
  5. Return all mushrooms to the pan, pour in remaining marinade, and cook until sauce thickens, about 3-5 minutes.
  6. Transfer mushrooms to a serving platter, pairing with steamed rice and garnish with cucumber, sesame seeds, and scallions.
