Heat olive oil in a skillet over medium heat.
Add sliced bell pepper and onion, sauté until softened.
Stir in shredded chicken, chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until heated through.
Place a tortilla in a separate skillet over medium heat.
Sprinkle half of the tortilla with cheese, then add a portion of the chicken mixture on top.
Fold the tortilla in half and cook until golden brown, then flip to cook the other side.
Repeat with remaining tortillas and filling.
Slice and serve with your favorite toppings.
