  • 1 leaf Bay Leaf
  • 1 tablespoon Ginger Fresh, sliced
  • 1 star Star Anise Or substitute with cloves
  • 1 teaspoon Peppercorns Whole
  • 1 teaspoon Coriander Seeds Or ground coriander
  • 2 tablespoons Lime Juice
  • 1 teaspoon Salt
For the Salad
  • 275 grams Chicken Breasts (Boneless)
  • 2 medium Cucumbers Sliced
  • 1/2 cup Roasted Peanuts Chopped
  • 1/4 cup Fresh Mint Leaves
  • 1/4 cup Fresh Coriander (Cilantro) Leaves Optional
  • 1/4 cup Chopped Spring Onions
  • 2 tablespoons Toasted Sesame Seeds Optional
For the Dressing
  • 2 cloves Garlic Minced
  • 1 tablespoon Peanut Butter
  • 3 tablespoons Light Soy Sauce
  • 1 teaspoon Crushed Sichuan Peppercorns Optional
  • 1/2 teaspoon Chili Flakes Adjust to taste
  • 1 tablespoon Korean Chili Powder (Gochugaru) Optional
  • 1 tablespoon Honey
  • 2 tablespoons Cooking Oil (Groundnut/Peanut/Canola)
  • 1 tablespoon Vinegar e.g., rice vinegar

Method
 

Step-by-Step Instructions
  1. In a medium pot, combine water, bay leaf, ginger, star anise, peppercorns, coriander seeds, lime juice, and salt. Bring to a rolling boil. Add the chicken breasts, cover and remove from heat. Let sit for 20-25 minutes.
  2. In a mixing bowl, combine minced garlic, crushed Sichuan peppercorns, chili flakes, Korean chili powder, half the sesame seeds, and a pinch of salt. Heat cooking oil until shimmering and pour over the spice mixture. Stir in peanut butter, soy sauce, honey, and spring onions, adding poaching liquid for consistency.
  3. On a large platter, layer sliced cucumbers. Shred poached chicken and arrange over cucumbers. Sprinkle with peanuts, remaining sesame seeds, mint, cilantro, and spring onions.
  4. Drizzle dressing over salad or toss together in a large bowl until well coated. Serve immediately for the freshest taste.
