Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips

Method
 

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add the chopped onion, bell pepper, and garlic to the skillet and sauté until the vegetables are tender, about 5 minutes.
  4. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  5. In a large mixing bowl, combine the cooked rice with the beef and vegetable mixture. Stir until well combined.
  6. Transfer the mixture to a greased 9x13-inch baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top, followed by the crushed tortilla chips.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Let cool for 5 minutes before serving.
