Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 cup corn frozen or canned, drained
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/2 cup red onion diced
  • 1/2 cup cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnish optional

Method
 

  1. In a large bowl, combine the cooked chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve immediately, garnished with tortilla strips if desired.
