For the Meatloaf
  • 1 tablespoon Olive Oil or avocado oil for a substitute
  • 1 medium Onion finely diced
  • 3 cloves Garlic freshly minced
  • 1 pound Ground Chicken or ground turkey for a leaner option
  • 1 cup Seasoned Breadcrumbs plain breadcrumbs with extra seasoning can work too
  • 1/2 cup Milk chicken broth can replace for dairy-free
  • 1/2 cup Parmesan Cheese swappable with other cheese
  • 1 large Egg room temperature
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt to taste
  • 1 cup Mozzarella Cheese Strings for the gooey center
  • 1 cup Marinara Sauce homemade preferred
  • 1/2 cup Panko Breadcrumbs
  • 2 tablespoons Butter melted for topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with foil for easy cleanup.
  2. In a medium skillet, add olive oil over medium heat. Add diced onion and minced garlic, sauté for about 3–5 minutes until softened.
  3. In a large mixing bowl, combine ground chicken, cooled onions, garlic, seasoned breadcrumbs, milk, Parmesan cheese, and egg. Add parsley, Italian seasoning, and salt. Mix gently.
  4. Shape two-thirds of the meat mixture into a loaf on the baking sheet, creating a well in the center for the mozzarella.
  5. Cover the mozzarella with the remaining meat mixture, sealing it well.
  6. Spoon marinara sauce over the meatloaf before baking.
  7. Bake for 45 minutes until golden brown.
  8. Prepare the topping by mixing melted butter, panko breadcrumbs, grated Parmesan, and parsley.
  9. After 45 minutes, remove the meatloaf and top with mozzarella and the panko mixture. Bake another 15–20 minutes.
  10. Let the meatloaf rest for 10 minutes before slicing.
