Ingredients
  

Sauce
  • 1 tablespoon Oyster Sauce
  • 2 tablespoons Soy Sauce low-sodium recommended
  • 1 tablespoon Dark Soy Sauce can be skipped
  • 1 teaspoon Granulated Sugar can substitute with honey
  • 1 teaspoon Pepper adjust to taste
  • 1 teaspoon Sriracha optional
Beef
  • 1 pound Thinly Sliced Beef skirt, flap, flank, or ribeye recommended
  • 1 teaspoon Baking Soda for tenderizing
  • 1 teaspoon Garlic Powder or fresh garlic
Vegetables
  • 1 medium Onion or shallots
  • 1 bunch Chinese Broccoli (Gai Lan) or swap with broccoli
  • 1 cup Bean Sprouts omit if not available
  • 2 stalks Green Onion dark green parts for cooking
Noodles and Cooking
  • 8 ounces Rice Noodles extra wide preferred
  • 2 tablespoons Cooking Oil neutral oil recommended
  • to taste teaspoon Salt

Method
 

Preparation
  1. In a bowl, whisk together the oyster sauce, soy sauce, dark soy sauce, granulated sugar, pepper, and Sriracha until fully combined. Set aside.
  2. In a separate bowl, combine thinly sliced beef with baking soda, garlic powder, and half of the prepared sauce. Mix well and let marinate for 15-20 minutes.
  3. Heat cooking oil in a wok over medium-high heat. Add marinated beef and stir-fry for 1-2 minutes until slightly pink. Set aside.
  4. In the same wok, add more oil if needed, then add sliced onion and Chinese broccoli. Stir-fry for 1-2 minutes until tender-crisp.
  5. Add rice noodles and half of the remaining sauce. Toss gently for 1-2 minutes to coat the noodles.
  6. Stir in bean sprouts and dark green parts of green onions with remaining sauce. Toss again for another 1-2 minutes.
  7. Return the cooked beef to the wok and gently combine with the noodles and vegetables. Adjust seasoning with salt if needed. Plate and garnish with white parts of green onion.
