Ingredients
  

For the Chicken
  • 1 pound Chicken Thighs can substitute with boneless chicken breasts
  • 1/4 cup Soy Sauce opt for low-sodium soy sauce if desired
  • 1 tablespoon Sesame Oil substitute with vegetable oil if needed
For the Broth
  • 3 cloves Garlic minced, fresh preferred
  • 1 inch Ginger minced, fresh preferred
  • 1 tablespoon Brown Sugar substitutions can include honey or maple syrup
  • 3 cups Chicken Broth can substitute with vegetable broth
  • 1 tablespoon Rice Vinegar can be replaced with apple cider vinegar or omitted
For Thickening
  • 1 tablespoon Cornstarch mix with water
  • 2 tablespoons Water to mix with cornstarch
For Serving
  • 1 cup Jasmine Rice can substitute with basmati or long-grain rice
  • 2 cups Water for cooking the rice
  • 2 stalks Green Onions sliced, for garnish
  • Salt to taste
  • Pepper to taste

Method
 

Preparation Steps
  1. Begin by cutting the chicken thighs into bite-sized pieces. Season the chicken with salt and pepper. Set aside.
  2. In a mixing bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, and brown sugar. Marinate the chicken for about 10 minutes.
  3. Rinse jasmine rice under cold water until water runs clear. In a saucepan, bring 2 cups of water to a boil, add rice, cover, and reduce heat to low. Cook for 15 minutes.
  4. In a large pot, heat oil and add the marinated chicken. Sauté for 5 to 7 minutes until caramelised and golden brown.
  5. Pour in chicken broth and rice vinegar, bring to a boil, then reduce to a simmer for about 10 minutes.
  6. Mix cornstarch with water until smooth. Slowly add to the simmering broth while stirring. Continue cooking for 5 minutes.
  7. Taste the broth and adjust seasoning with salt and pepper. Stir to combine.
  8. Serve with a portion of jasmine rice, ladle the chicken and broth over it, and garnish with green onions.

Notes
