Preparation Steps
- Begin by cutting the chicken thighs into bite-sized pieces. Season the chicken with salt and pepper. Set aside.
- In a mixing bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, and brown sugar. Marinate the chicken for about 10 minutes.
- Rinse jasmine rice under cold water until water runs clear. In a saucepan, bring 2 cups of water to a boil, add rice, cover, and reduce heat to low. Cook for 15 minutes.
- In a large pot, heat oil and add the marinated chicken. Sauté for 5 to 7 minutes until caramelised and golden brown.
- Pour in chicken broth and rice vinegar, bring to a boil, then reduce to a simmer for about 10 minutes.
- Mix cornstarch with water until smooth. Slowly add to the simmering broth while stirring. Continue cooking for 5 minutes.
- Taste the broth and adjust seasoning with salt and pepper. Stir to combine.
- Serve with a portion of jasmine rice, ladle the chicken and broth over it, and garnish with green onions.
