Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and chop the garlic and onion.
  2. Heat half of the olive oil in the skillet over medium heat. Add the minced garlic and sliced yellow onion, sauté for about 5 minutes.
  3. Season the chicken thighs with salt, pepper, and spices. Increase heat to medium-high and sear the chicken for 4 to 5 minutes on each side.
  4. Layer the sliced preserved lemons and green olives atop the chicken. Pour in enough water to cover the chicken partially.
  5. Cover the skillet and transfer it to the oven. Bake for about 1 hour, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. For a crispy finish, switch your oven to broil and cook the tagine for another 5 minutes.
  7. Remove the tagine from the oven, let it rest briefly, and serve warm over couscous or Moroccan bread.
