  • 1 lb Pork substitute with chicken, beef, shrimp, or tofu
For the Vegetables
  • 2 cups Cabbage or bok choy or spinach
  • 1 cup Mushrooms shiitake or button mushrooms
  • 1 bunch Green Onions garnish; chives or shallots work
For the Sauces
  • 3 tbsp Soy Sauce low-sodium options recommended
  • 2 tbsp Oyster Sauce or mushroom sauce for vegetarian option
  • 1 tbsp Sesame Oil use sparingly as flavor is strong

Method
 

Step-by-Step Instructions
  1. Marinate the pork by slicing it into thin strips and combining it with soy sauce, oyster sauce, and sesame oil in a mixing bowl. Allow to marinate for at least 15 minutes.
  2. Cook the noodles in a large pot of salted boiling water according to package instructions for 3-5 minutes until al dente, then drain and rinse under cold water.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Add the marinated pork, stir-frying for 4-5 minutes until browned and cooked through.
  4. Add chopped cabbage, mushrooms, and green onions to the skillet, stir-frying for an additional 3-4 minutes until vegetables are wilted yet crisp.
  5. Combine the drained noodles with the pork and vegetables in the skillet, pour the remaining marinade over and stir-fry for another 2-3 minutes.
  6. Taste and adjust seasoning as needed, then serve hot garnished with extra green onions.
