Ingredients
  

For the Chicken
  • 1 pound Boneless Chicken Thigh/Breast swap with beef or seafood for a different taste
  • 2 tablespoons Light Soy Sauce for marinating
  • 1 teaspoon Baking Soda for tenderizing
For the Noodles
  • 8 ounces Flat Rice Noodles fresh preferred
  • 2 tablespoons Vegetable Oil for stir-frying
For the Sauce
  • 1 tablespoon Sesame Oil
  • 3 tablespoons Oyster Sauce
  • 1 tablespoon Dark Soy Sauce
  • 1 teaspoon Sugar for balance
  • 1 tablespoon Rice Vinegar
  • 3 tablespoons Water to adjust consistency
For the Aromatics & Veggies
  • 1 tablespoon Ginger (finely chopped)
  • 3 cloves Garlic (finely chopped)
  • 1 cup Red and Green Bell Peppers sliced
  • 1 cup Spring Onions sliced into 2-inch pieces
  • 1 cup Bean Sprouts for crunch

Method
 

Cooking Steps
  1. Begin by cutting boneless chicken into thin slices. In a medium bowl, combine the chicken with light soy sauce and a sprinkle of baking soda, mixing well. Allow it to marinate for about 10 minutes.
  2. In a separate bowl, blend together the sesame oil, oyster sauce, dark soy sauce, sugar, rice vinegar, and water until well combined.
  3. Preheat a large pan or wok over medium heat, adding a splash of vegetable oil. Once hot, add the finely chopped garlic and ginger, stir-frying for about 1 minute.
  4. Add the marinated chicken to the pan, cooking for 1-2 minutes, until golden brown and cooked through.
  5. Toss in the flat rice noodles along with the previously mixed sauce. Stir-fry everything together for about 1 minute.
  6. Next, add in the red and green bell peppers, bean sprouts, and spring onions. Stir-fry for another minute until vibrant.
  7. Carefully transfer your Chicken Chow Fun to a serving plate and garnish with sesame seeds or additional spring onions if desired.
