Cooking Steps
- Begin by cutting boneless chicken into thin slices. In a medium bowl, combine the chicken with light soy sauce and a sprinkle of baking soda, mixing well. Allow it to marinate for about 10 minutes.
- In a separate bowl, blend together the sesame oil, oyster sauce, dark soy sauce, sugar, rice vinegar, and water until well combined.
- Preheat a large pan or wok over medium heat, adding a splash of vegetable oil. Once hot, add the finely chopped garlic and ginger, stir-frying for about 1 minute.
- Add the marinated chicken to the pan, cooking for 1-2 minutes, until golden brown and cooked through.
- Toss in the flat rice noodles along with the previously mixed sauce. Stir-fry everything together for about 1 minute.
- Next, add in the red and green bell peppers, bean sprouts, and spring onions. Stir-fry for another minute until vibrant.
- Carefully transfer your Chicken Chow Fun to a serving plate and garnish with sesame seeds or additional spring onions if desired.

Notes
For best results, use fresh wide rice noodles and ensure chicken is marinated properly for tenderness.
