Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the melted butter, minced garlic, oregano, thyme, salt, and black pepper. Stir well to combine.
Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the hot potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and garnish with fresh parsley before serving.
