Ingredients
  

Crust
  • 1 cup Butter cold, softened
  • 0.5 cup Powdered Sugar
  • 2 cups All-Purpose Flour can substitute with gluten-free flour
  • a pinch Salt
Filling
  • 3 large Eggs whisked
  • 2 cups Granulated Sugar reduce for less sweetness
  • 0.5 cup All-Purpose Flour
  • 0.5 teaspoon Baking Powder skip if using self-raising flour
  • 3 cups Diced Rhubarb fresh preferred

Method
 

Preparation and Baking
  1. Preheat oven to 350°F (175°C) and prepare a 9x13-inch baking pan with parchment paper or grease it.
  2. In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of powdered sugar, and a pinch of salt. Cut in 1 cup of cold, softened butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes until lightly golden. Let cool slightly.
  4. In another bowl, whisk together 3 eggs, 2 cups of granulated sugar, 1/2 cup of flour, and 1/2 teaspoon of baking powder. Fold in 3 cups of diced rhubarb.
  5. Pour the filling over the cooled crust and bake for 40-45 minutes until set and lightly golden.
  6. Allow to cool completely in the pan before slicing into squares. Enjoy!
