Preparing the Tart
  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar until sandy. Press into tart pan and chill for at least 1 hour.
  2. Make the filling by beating cold heavy whipping cream and vanilla until stiff peaks form. In another bowl, combine softened cream cheese and powdered sugar until smooth. Mix in lemon zest and juice.
  3. Gently fold whipped cream into cream cheese mixture until just combined. Aim for a light and fluffy texture.
  4. Pour cream cheese filling into chilled crust. Arrange fresh berries on top and refrigerate for at least 1 hour before serving.
  5. Slice and serve the tart on a platter, optionally garnishing with powdered sugar or honey.
