Preparation Steps
  1. Trim the ends of 2 Persian cucumbers and cut them into 1-inch chunks. Smash the cucumber pieces until they crack but still hold their shape.
  2. Combine the smashed cucumber with 2 finely chopped green onions and sprinkle with kosher salt. Stir gently.
  3. Whisk together the dressing ingredients: 2 tablespoons toasted sesame oil, 2 tablespoons seasoned rice vinegar, 1 tablespoon soy sauce, 1 teaspoon Everything Bagel seasoning, 1 tablespoon grated ginger, and 1 tablespoon honey.
  4. Pour the dressing over the cucumber mixture and toss gently to coat. Add chopped cilantro and mix.
  5. Cover and refrigerate the salad for at least 30 minutes before serving.
