  • 4 medium Cucumbers English or Persian for best texture
For the Dressing
  • 1/4 cup Vinegar Rice or apple cider vinegar
  • 2 tablespoons Olive Oil Extra virgin is best
  • 2 cloves Garlic Minced
  • 1/2 teaspoon Salt Use low-sodium if preferred
  • 1/4 teaspoon Pepper Optional
  • 1 teaspoon Sugar Optional for a low-sugar version
  • 2 tablespoons Fresh Dill Use 1 tsp dried as substitute
Optional Additions
  • 1/2 medium Red Onion Thinly sliced
  • 1 teaspoon Chili Flakes For added spice

Method
 

Steps
  1. Wash and slice the cucumbers into 1/8 inch rounds. Place in a large mixing bowl.
  2. In a small bowl, whisk together vinegar, olive oil, minced garlic, salt, pepper, and sugar until emulsified.
  3. Pour the dressing over cucumbers and gently toss to coat evenly.
  4. Cover and let sit at room temperature for 15 minutes to meld flavors, or refrigerate for 1-2 hours for best results.
  5. Serve chilled using a slotted spoon to drain excess liquid.
