Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup fruit preserves strawberry or grape

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter and sugar, mixing until well blended.
  3. Add the egg, vanilla extract, baking soda, and salt, and stir until the dough is smooth.
  4. Using a tablespoon, scoop out dough and roll it into balls.
  5. Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  6. Use your thumb to make an indentation in the center of each cookie.
  7. Spoon about 1/2 teaspoon of fruit preserves into each indentation.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
