  • 1 tablespoon Lime Juice freshly squeezed
  • 1/4 cup Cilantro chopped, optional
  • 2 tablespoons Olive Oil or any neutral oil
  • 1 teaspoon Garlic Powder or substitute with fresh minced garlic
For Skewering
  • 4 pieces Wooden or Metal Skewers soak wooden skewers in water beforehand
  • 1 cup Vegetables like bell peppers, onions, or zucchini, optional

Method
 

Preparation Steps
  1. In a food processor, blend chipotle peppers, lime juice, garlic powder, cilantro, and olive oil until smooth.
  2. In a large mixing bowl, combine shrimp and marinade, ensuring shrimp are thoroughly coated. Cover and refrigerate for at least 20 minutes.
  3. Preheat the oven to broil at high heat, ensuring it reaches around 500°F (260°C) and soak wooden skewers in water for 15 minutes.
  4. Thread marinated shrimp onto skewers, adding vegetables in between if desired.
  5. Place skewers on a baking sheet and broil for 5-7 minutes, turning halfway through until shrimp are pink and opaque.
  6. Let skewers rest for a minute before serving warm with sides like rice or tortillas.
