- Preheat your oven to 350°F. Generously coat a 9x5 inch loaf pan with baking spray and line the bottom with a parchment sling.
- Melt ½ cup of unsalted butter in a medium saucepan over low heat, then stir in ⅓ cup of natural cocoa powder until smooth.
- Mash 1 cup of very ripe bananas in a large mixing bowl until smooth and mix in the warm butter and cocoa mixture.
- Whisk in 1 cup of light brown sugar, ⅓ cup of sour cream, 1 large egg, 1 teaspoon of vanilla extract, ½ teaspoon of table salt, and ½ teaspoon of baking soda.
- Fold in 1 ¼ cups of all-purpose flour until just combined, then add in 1 cup of bittersweet chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle the remaining ½ cup of bittersweet chocolate chips on top.
- Bake in the preheated oven for 50 minutes, then reduce the temperature to 325°F and bake for an additional 10 minutes.
- Remove from the oven and cool in the pan for 15 minutes before transferring to a cooling rack for at least one hour.
