  • 200 grams Spaghetti Or any preferred pasta shape
For the Sauce
  • 2 tablespoons Olive Oil Extra virgin preferred for flavor
  • 100 grams Button Mushrooms Can substitute with cremini or shiitake
  • 100 grams Oyster Mushrooms Can replace with more button mushrooms
  • 3 cloves Garlic Finely chopped
  • 1 teaspoon Chilli Flakes Adjust to spice preference
  • 2 tablespoons Parsley fresh or dried
  • 50 grams Parmesan Grated; omit for a vegan option

Method
 

Cooking Steps
  1. Boil a large pot of salted water, add spaghetti, and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
  2. In a skillet, heat 1 tablespoon of olive oil over medium-high heat, add sliced button and oyster mushrooms, and sauté until golden brown and tender, about 3-4 minutes.
  3. Reduce heat, add the remaining tablespoon of olive oil, then stir in finely chopped garlic, cooking for 2-3 minutes until light golden.
  4. Sprinkle chili flakes into the garlic and oil mixture, add reserved pasta water, season with salt, and let simmer for 2-3 minutes.
  5. Add the cooked spaghetti and sautéed mushrooms to the skillet, tossing until well combined, about 2 minutes.
  6. Stir in parsley, serve hot topped with grated Parmesan if desired.
