In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Stir in the diced red bell pepper and sliced zucchini. Cook for another 5 minutes until the vegetables are tender.
Add the halved cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes until the tomatoes start to soften.
Remove from heat and sprinkle the crumbled feta cheese on top. Garnish with fresh parsley before serving.
