Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup feta cheese crumbled
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced red bell pepper and sliced zucchini. Cook for another 5 minutes until the vegetables are tender.
  5. Add the halved cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes until the tomatoes start to soften.
  6. Remove from heat and sprinkle the crumbled feta cheese on top. Garnish with fresh parsley before serving.
