Ingredients
  

For the Vegetables
  • 1 lb Brussels Sprouts fresh, halved
  • 1 cup Butternut Squash cubed
For the Bacon
  • 6 slices Bacon chopped into bite-sized pieces
For the Glaze
  • 1/4 cup Maple Syrup substitutable with honey
  • 2 tbsp Olive Oil can use avocado oil
For the Seasoning
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper preferably freshly ground
  • 1 tsp Garlic Powder or use fresh garlic
  • 1/4 tsp Crushed Red Pepper Flakes optional
For the Garnish
  • 2 tbsp Fresh Parsley chopped

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine halved Brussels sprouts with cubed butternut squash.
  3. Chop the bacon into bite-sized pieces and add to the vegetable mixture. Stir until well incorporated.
  4. Drizzle olive oil over the mixture and sprinkle with salt, black pepper, garlic powder, and optional crushed red pepper flakes. Toss until evenly coated.
  5. Transfer the mixture onto a parchment-lined baking sheet and spread it out evenly.
  6. Roast in the oven for 20-25 minutes, stirring halfway through.
  7. Drizzle maple syrup over the roasted vegetables and bacon, then toss to coat.
  8. Return to the oven for an additional 5-10 minutes to caramelize the maple syrup.
  9. Garnish with fresh parsley before serving.
