- Mix all-purpose flour, yogurt powder, and sugar in a large bowl until blended. Gradually add milk to form a soft dough and divide into three portions.
- Add freeze-dried mango powder to one portion and a pinch of steeped saffron to the other. Knead each colored dough until well incorporated.
- Take small portions from each colored dough and roll them into cohesive balls, combining the white, orange, and yellow dough.
- Flatten each dough ball into a thick disc, roll in sugar, and place on a parchment-lined baking tray with space between each.
- Preheat the oven to 350°F (175°C) and bake cookies for 14-15 minutes. Remove when still soft to the touch.
- Press each cookie to flatten slightly and sprinkle with chopped pistachios. Return to the oven for an additional 2 minutes.
- Transfer to a wire rack to cool completely before serving with warm chai.
