Step-by-Step Instructions
  1. Mix all-purpose flour, yogurt powder, and sugar in a large bowl until blended. Gradually add milk to form a soft dough and divide into three portions.
  2. Add freeze-dried mango powder to one portion and a pinch of steeped saffron to the other. Knead each colored dough until well incorporated.
  3. Take small portions from each colored dough and roll them into cohesive balls, combining the white, orange, and yellow dough.
  4. Flatten each dough ball into a thick disc, roll in sugar, and place on a parchment-lined baking tray with space between each.
  5. Preheat the oven to 350°F (175°C) and bake cookies for 14-15 minutes. Remove when still soft to the touch.
  6. Press each cookie to flatten slightly and sprinkle with chopped pistachios. Return to the oven for an additional 2 minutes.
  7. Transfer to a wire rack to cool completely before serving with warm chai.
