  • 1 ripe avocado diced
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. In a large bowl, combine the diced mangoes, avocado, red bell pepper, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, black pepper, and red pepper flakes until well combined.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
