Preheat your oven to 425°F (220°C).
Wash and scrub the russet potatoes thoroughly. Cut them into thin strips to create fries.
In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Remove the fries from the oven and sprinkle the shredded cheddar cheese evenly over the top. Add the crumbled bacon. Return to the oven for an additional 5 minutes or until the cheese is melted.
Once out of the oven, top with sliced green onions, sour cream, and jalapeños if desired. Serve immediately.
