  • 1 cup Plain Yogurt Consider almond or coconut yogurt, or swap for applesauce for fat-free
  • 1/2 cup Oil or Applesauce For added moisture
  • 1/2 cup Lemon Juice Freshly squeezed
  • 1 tbsp Lemon Zest Vital for lemon flavor
  • 1 tsp Vanilla Extract

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar for about 30 seconds.
  3. In another bowl, whisk together milk, yogurt, oil/applesauce, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined to avoid overmixing.
  5. Transfer the batter into the prepared loaf pan, ensuring it's even.
  6. Bake for 50-55 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For frosting, drizzle with a glaze made from powdered sugar and milk if desired.
