Preparation
- In a medium bowl, whisk together gluten-free flour, salt, and baking powder until well combined.
- Create a well in the center and pour in warm water and olive oil. Mix by hand or with a spoon until a soft, slightly sticky dough forms.
- If the dough seems too dry, add a little more warm water to achieve a smooth and slightly elastic consistency.
- Place a non-stick frying pan over medium heat and let it preheat for about 2-3 minutes.
- Drizzle a splash of olive oil if desired to enhance flavor and prevent sticking.
- Divide the dough into equal portions, about the size of golf balls. On a lightly floured surface, flatten each portion to about ¼ inch thick.
- Cook the flatbread in the heated pan for 2-3 minutes until bubbles appear and the underside is golden brown.
- Flip and cook for another 2-3 minutes until both sides are browned.
- Remove the cooked flatbreads from the pan and serve warm with your choice of toppings.
