- In a medium bowl, whisk together soy sauce, hoisin sauce, rice vinegar, honey, five-spice powder, minced garlic, and grated ginger until well combined.
- Place bone-in, skin-on chicken thighs into a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
- Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Remove the marinated chicken from the refrigerator, and arrange the pieces evenly on the prepared baking sheet.
- Bake the chicken in the preheated oven for 45-55 minutes, basting with the leftover marinade every 15 minutes.
