  • 1/4 cup Ice Water Add gradually until dough forms.
For the Filling
  • 1 tbsp Olive Oil For sautéing onions.
  • 1 medium Onion Can substitute with shallots.
  • 2 cloves Garlic Garlic powder can be used in a pinch.
  • 1 cup White Cheddar Cheese Swap with mozzarella for a milder taste.
  • 1/4 cup Additional Parmesan For sprinkling.
  • 2 tbsp Fresh Thyme Or substitute with seasonal herbs.
  • 2 tbsp Fresh Parsley
  • 2 tbsp Chives
  • 4 large Tomatoes Use ripe varieties.
  • 1 tbsp Heavy Cream For brushing.

Method
 

Dough Preparation
  1. Combine flour, parmesan, Italian seasoning, black pepper, sugar, and salt in a food processor. Pulse in cold butter until mixture resembles coarse crumbs, about 10 seconds. Gradually add ice water until dough comes together. Form into a disc, wrap in plastic, and chill for 1 hour.
Baking Instructions
  1. Preheat your oven to 400°F (200°C) while the dough chills. Prepare a baking sheet lined with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until golden and caramelized, approximately 10 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant. Let cool.
  3. Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer it onto the prepared baking sheet.
  4. Spread sautéed onions on the center of the dough, layer with tomato slices, sprinkle cheese, herbs, and season with salt and pepper.
  5. Fold the dough edges over the filling, leaving the center exposed. Press gently to secure.
  6. Brush crust edges with heavy cream and bake for 35-45 minutes until golden brown and filling is bubbling.
