Cookie Dough
  • 0.5 cup unsalted butter must be very softened
  • 0.75 cup granulated white sugar can use a combination with brown sugar
  • 1 large egg use at room temperature
  • 2 cups all-purpose flour spoon and level to prevent excess flour
  • 1 teaspoon baking powder ensure freshness
  • 0.5 teaspoon baking soda ensure freshness
  • 0.5 teaspoon salt use unsalted butter if using salted butter
Strawberry Jam
  • 1 cup fresh strawberries substitute with other berries if desired
  • 0.25 cup granulated sugar adjust based on berry sweetness
Finishing
  • 0.5 cup sugar for rolling feel free to add crushed graham crackers

Method
 

Cheesecake Filling Preparation
  1. Mix cold cream cheese, granulated sugar, and vanilla extract until fluffy and smooth, about 3-4 minutes. Scoop into small discs and freeze for at least 1 hour.
Strawberry Jam Preparation
  1. Combine diced strawberries and sugar in a saucepan. Cook until thickened, about 10-12 minutes. Cool and chill.
Cookie Dough Preparation
  1. Preheat the oven to 350°F (175°C). Whisk together flour, baking powder, baking soda, and salt. Cream butter and sugar until light and fluffy, then mix in egg and vanilla.
Combine Ingredients
  1. Fold the dry ingredients into the creamed mixture, then add strawberry jam in small pockets without fully mixing.
Form Cookies
  1. Scoop dough, flatten slightly, place a cheesecake disc in the center, wrap dough around it, and roll in granulated sugar.
Bake
  1. Arrange cookies on a lined baking sheet and bake for 11-12 minutes. Allow to cool on the baking sheet.
Cool Cookies
  1. Let the cookies cool for 10 minutes before transferring them to a wire rack.
