Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease muffin tins with nonstick spray or melted butter.
  2. Roll out the refrigerated pie crust on a floured surface and cut into circles about 5 to 6 inches in diameter.
  3. Press the dough circles into the greased muffin tins to create cups for filling.
  4. Spoon about 1 to 1½ teaspoons of pizza sauce into each crust cup.
  5. Layer each cup with shredded mozzarella cheese, followed by mini pepperoni slices or your choice of vegetables.
  6. Cut smaller circles from the remaining pie crust to serve as tops, and place them atop the filled cups.
  7. Whisk an egg in a bowl to create an egg wash, brush the tops of each pot pie, and sprinkle grated Parmesan if desired.
  8. Bake for about 20 to 25 minutes until the tops are golden brown and the cheese is bubbling.
  9. Allow the pot pies to cool for about 5 minutes before serving.
