Preparation
- Preheat your oven to 375°F (190°C). Grease muffin tins with nonstick spray or melted butter.
- Roll out the refrigerated pie crust on a floured surface and cut into circles about 5 to 6 inches in diameter.
- Press the dough circles into the greased muffin tins to create cups for filling.
- Spoon about 1 to 1½ teaspoons of pizza sauce into each crust cup.
- Layer each cup with shredded mozzarella cheese, followed by mini pepperoni slices or your choice of vegetables.
- Cut smaller circles from the remaining pie crust to serve as tops, and place them atop the filled cups.
- Whisk an egg in a bowl to create an egg wash, brush the tops of each pot pie, and sprinkle grated Parmesan if desired.
- Bake for about 20 to 25 minutes until the tops are golden brown and the cheese is bubbling.
- Allow the pot pies to cool for about 5 minutes before serving.
